These include the ever-popular Simple ‘N’ Light, that’s linguini pasta simply tossed with olive oil, garlic, sweet tomatoes and fresh basil finished with shaved parmesan and crumbled feta cheese, a dish that has been on the menu since the restaurant first started. If you love fish then you must try their Banana Leaf Roasted Snapper, that’s a fillet of fresh snapper seasoned with cilantro, sweet and island vegetables, tucked in a banana leaf, slow-roasted and served over creamy coconut-infused cassava along with grilled carrots, zucchini and a stuffed tomato. But ensure you have room for dessert because they are legendary and a visit to Cimboco wouldn’t be the same without a slice of pecan pie to round off the meal!
